normally for a bike generator DC permanent magnet motors are used that is quite expensive. An old car alternator is much cheaper option. Here is my first try for powering a lamp (sorry for a bit shaky video).
The difference is alternator needs to see 12V for starting up because it has not magnets inside.

how did you wire the alternator up? did you just simply go from alternator to inverter to the bulb?
Unfortunately it is not so easy. wiring depends a lot on the model of alternator. i recommend to use the one with 3 pins. i will add a photo to the post that you can see my connections. i hope it helps.
PS. dont forget to add external power source of 12v! otherwise your alternator wont start up.
